Bakeria adds a station nothing else has: rolling the dough and laying the top crust the ticket names — lattice, cut-outs or plain. After that come filling, bake and toppings, so a single pie is the longest build in the series and the queue, not the pie, is what beats you.

Three tips for five stars

1. 1Roll the next crust while a pie bakes; the crust station has no timer and is where the slack lives.
2. 2Lattice tops score on pattern — drag the strips straight rather than fast.
3. 3Fillings are scored by fill line: stop at the mark, not at the rim.
