Every customer wants three donuts, each with its own dough, cutter shape, fry time, filling, glaze and shaker topping. No single step is hard; the difficulty is a ticket that produces nine or ten separate choices while the fryer works on all three at once. If you like the sorting more than the meters, this is your shop.

Three tips for five stars

1. 1Cut all three shapes before frying — the fryer takes a whole tray.
2. 2Inject fillings with the tip inside the donut; a short press scores half.
3. 3Glaze before shakers, always; the topping will not stick to a dry donut.
